Ingredients :

For about 25 muffins, divide the recipe if needed.

– 450g of flour

– 30cl of lukewarm milk

– 20g oil

– 1 tsp of salt

– 1 case of sugar

– 20g of baker’s yeast (fresh or dry)

– optional fine semolina

Pour the lukewarm milk and the yeast into the bowl of the food processor or into a bowl if you are doing it by hand. Mix. Add flour, salt, oil and sugar. Knead with the hook for a good 5 minutes. Form a ball, wrap in film or cover with a tea towel and leave to rest.

*For rest, if you are on sunny days or in summer, 30 minutes is enough. If it is in winter, 1 hour.

After the rest time, roll out the dough to a thickness of 1.5/2cm and cut out circles with a glass or cookie cutter. Pass the muffins in the fine semolina and place them on a tray, spacing them out. Leave to stand for 30 minutes at room temperature without covering or wrapping the English muffins.

Heat a skillet over medium heat, lightly oiled and place your muffins in it. Watch the cooking because it varies according to the fires or plate but count 2-3 minutes on each side.
