After a start to the year rich in pancakes, I really wanted chocolate (yes, even after Christmas)! And while shopping at the supermarket, I very quickly found myself in the yoghurt and other departments. It’s impressive the amount of choice and it only takes a few seconds to make you want and finally fall for a product. Well, this desire happens to me very often with chocolate mousse when in reality it will take me less than 15 minutes to make it at home and that by controlling the sugar, the quality of the products and without indecipherable ingredients. So barely back, hop I open the best simple and gourmet recipe book and in a few minutes my chocolate mousse is cool! Ready for more homemade in 2022?!

Ingredients :

160g 64% dark chocolate

110g of liquid cream 30% fat min.

4 eggs

30g of sugar

A recipe for 6 to 8 people, approx. 1 large ramekin, 3 medium ramekins and 8-9 small ramekins.

1. Break the chocolate into pieces in a bowl then boil the liquid cream. Pour it in two times over the chocolate and mix until it is melted.

2. Separate the egg whites and yolks, mix the yolks with the chocolate.

3. Beat the egg whites, when it starts to foam, pour the 30g of sugar little by little. No need to whip for a long time, it’s not a meringue! Your whites are ready when, once turned over, they no longer move. Gently fold the egg whites into the chocolate, always working from the center out

4. Pour the mousse into ramekins then reserve in the refrigerator for 2 hours.

It’s ready !
A mousse that sticks to the spoon but melts in your mouth, you can’t refuse yummy
